Green Goddess Rice Pilaf

This Green Goddess Rice Pilaf combines creamy basmati rice with crisp green vegetables, crunchy pistachios, and a zesty dressing. It is delicious and filling as the main feature of your meal, or it accompanies other foods well as a side dish.

But what really makes vegetables the healthiest foods available is phytonutrients. These are chemicals that protect plants from disease, insects and injuries. They not only work inside the plants; they protect our bodies from disease as well.

In my opinion, you can’t eat too many green vegetables. So go ahead and load up your plate with delicious raw, steamed, roasted, or grilled green vegetables. According to the USDA, adults should eat around 2 to 3 cups of vegetables per day. But sadly, most people don’t even eat one serving on the daily.

Green Goddess Rice Pilaf

Prep Time: 20 minutes Cook Time: 20 minutes

For the Rice

  1. Rinse rice in a colander until water runs clear. Add basmati rice, 1 cup of water, and a pinch of salt to a small saucepan. Bring to a boil over high heat. Cover, reduce heat to medium-low, and cook until water is absorbed, 13 – 15 minutes.
  2. Thinly slice sugar snap peas and scallions. Dice cucumber. Snap asparagus spears at their natural break point to remove tough parts. Destem and roughly chop mint leaves. Halve the avocado, remove the pit, and thinly slice the flesh.  Juice the lemon.

For the Dressing

  1. To make dressing, add 1 tablespoon lemon juice, dried parsley, the ranch dressing, and a pinch of pepper to a small bowl. Stir the herbed ranch dressing.

For the Asparagus

  1. Heat a small skillet with 2 teaspoons olive oil over medium-high heat. Add the asparagus and cook until charred in places, 2 to 4 minutes. Sprinkle with salt and pepper, toss, and cook until crisp-tender, another 1 to 2 minutes.

Assemble the Dish

  1. Next, fluff the cooked basmati rice with a fork. Add the snap peas, scallions, cucumber, mint, pistachios, remaining lemon juice, and vegan butter and gently toss the vegetable pilaf to combine. Taste, and add salt and pepper as necessary.
  2. Divide the vegetable pilaf between large plates and top with cooked asparagus and sliced avocado. Finally, drizzle the green goddess vegetable pilaf with herbed ranch dressing.
